On the 17th Avenue Southwest strip, behind a set of massive, wrought iron doors sporting sculptural Asian motifs, something fun and sophisticated is going on inside Bar CRestaurant and Lounge. This sociable spot serves sharable dishes featuring local game meats paired with boutique wines, craft beers and, above all, creative cocktails.
Bar C manager Tristan Macdonald sits at the main bar in front of a chimango, a cocktail made with Mexican spirits and served with a tamarindo candy. “One of our bartenders had been travelling in Southeast Asia and she loved tamarind candy,” Tristan says of the spicy and fruity concoction. Such international inspirations can always be found on the seasonally changing cocktail menu at this 17th Avenue Southwest restaurant and lounge. The current edition of the menu is candy themed, featuring drinks with names like Snickers O.F., which contains Makers Mark, caramel, Frangelico and chocolate bitters and Pink Parts, concocted with Luxardo Cherry, various additional liquors, citrus, soda and egg white.
Tristan smiles as she recounts how Bar C staff did some team brainstorming together, landing on several inspired ingredients, and doing some sweetly enjoyable research and development. Tristan's proud contribution to the list is a drink dubbed The Opposite of Earl. An iced-tea cocktail featuring bourbon and ginger, it's influenced by her love of Earl Grey tea.
This invention process gives Bar C patrons new and often surprising drinks to sample on their nights out. And given that the establishment makes all of its own syrups and bitters, a new and novel specialty cocktail could appear any time.
